• Reverse searing for the win: Reverse searing provides steak enthusiasts with the best edge-to-edge doneness that other methods can’t, especially when used with an induction cooktop which helps give you complete control over your steak.

• Don’t get cute with your cut: Any steak can be cooked precisely using the Thermador Induction Innovation Collection, but my go-to is always skirt steak (it’s a longtime LaFrieda family favorite!).

• Ditch the oil: Never use oil when cooking meat on induction, as it doesn’t burn at cooking temperatures and will prevent your steak from getting that superb sear you’re looking for!

• It all starts with the sauce: Induction is my preferred method for cooking steak sauces, like hollandaise or bearnaise, since it maintains the optimal level of heat and eliminates the double boiler method.
